Located just northwest of Beaune and usually overshadowed by neighboring appellations of Aloxe Corton and Beaune, Savigny-Les Beaune represents extraordinary value in Burgundy. The soils here are predominantly clay and limestone based.
Hand harvested, the grapes are then carried in small wooden boxes to the cellars where they are sorted. Long fermentation takes place for 15 days in wooden open vats at a controlled temperature, with punching down of the cap. aging in oak barrels (15% new oak) and estate bottling after 15 months.
