After opening the distillery in 2019 our Single Pot Still Irish Whiskey is ready for you to enjoy. Made from 100% Cork grown barley, triple distilled in copper pot stills at Clonakilty Distillery, and matured in our Atlantic Ocean Warehouse.
This special whiskey was matured in ex-Bourbon and Amontillado casks, the whiskey presents flavors of sweet vanilla and kiwi, complemented by notes of caramelized pear and dark chocolate.
Nose: Vanilla sweetness leads to hints of demerara sugar, citrus peel and kiwi.
Taste: Vanilla, caramelised pear and apple, gives way to a gentle wood spice, dark chocolate and orange.

Vanilla, soft fruit, honey, and a distinct coastal freshness, with toasted oak, lime zest, and green melon, verging on kiwi aromas. It’s well-structured, with an excellent flow of flavors from coconut macaroon, orchard fruit, milk chocolate, and pot still spices to dark toffee and caramel. The finish offers Ferrero Rocher with a hint of maritime saltiness. An excellent debut pot still whiskey made from 100% Irish barley.
